For many Irish cheese lovers, the year 1995 is regarded as a pivotal moment, and with good reason. Before brothers Kevin and Seamus Sheridan began importing artisan cheeses for their modest market stall in Galway the fromage options often amounted to industrial-tasting edam or tasteless furry bries.
How far we have come; in those thirteen years the brothers (along with partner Fiona Corbett) have become synonymous with making available some of the finest cheeses the world has to offer. By forging close links with producers from France, Italy, Ireland and beyond they ensure that the produce reaches their market stalls (and shops) in the best possible condition.
