
For seventeen years now Pat Hyland, also known as Paddy Jack, has been producing his range of distinctive Abbey Cheeses from his farm in Cuffsboro,
Co Laois.
With ten years experience trading in the Temple Bar market he seems to know just what his customers want. His Abbey Brie and Blue varieties have been bestsellers since their introduction, while his “St Canice” is a versatile, sharp goat’s cheese that lends itself particularly well to cooking.
He has recently expanded his range to inlcude an impressive selection of continental cheeses. Pat also raises his own lambs, chickens, ducks and geese and carries products such as Malone’s excellent farmhouse jam. You will be surprised at the breadth of produce to be found at his stall, a little something to satisfy all tastes.
